Features
The RM-50 is an extremely reliable automatic gas rice cooker. The bimetallic temperature sensor mounted in the base of the rice pot provides optimum temperature accuracy. The pilot burner keeps rice hot after cooking has completed. The thick cast aluminum rice pot conducts heat to help rice cook evenly. The rice pot has plated steel drop handles that remain sufficiently cool to touch when the unit is in use. The stainless steel cover has a durable bakelite handle.
How to Cook Rice
Cooking rice is easy. Rinse the rice until the wash water becomes clear; about five water changes are sufficient. The rice pot may be used as the rinsing vessel. Cover the raw rice in the pot with approximately 1” of water. Put the stainless steel cover on the rice pot and place the pot in the unit. Push the Start button at left and the Piezo ignition lights the pilot burner. After pilot ignition is verified through the jacket window, push the right button labeled “Cook” to start cooking. The right button will not depress unless the red pilot burner button is depressed and visible below the Start button at left.
Good Rice is Cured Rice  
The unit automatically stops cooking when the rice has absorbed the water, after about 22 minutes. Wait ten minutes to let the rice cure. Measuring cup included. Not NSF or ETL listed. Six month warranty (warranty starts from Town’s date of invoice).

Features
The RM-55 offers all the features of our economy model with improvements; it has NSF and ETL listing. The rice pot and base are easy to clean. The burner system construction has been upgraded. Pressure regulator is included.
Top Quality
Years of experience and constant improvement are incorporated in our current designs. The bimetallic temperature sensor is superior to liquid, chemical or magnet systems used by others. The rice pot has comfortable, wide plated steel drop handles on the rice pot that remain cool enough to touch while the unit is in operation. These handles are able to withstand considerable abuse. Bakelite handle on the stainless steel cover is also durable.
Cook and Hold  
RM-55 is approved for cook and hold. It incorporates a stronger warming feature to maintain the temperature of the rice at the required temperatures.  
Mexican or Chinese?  
Wash rice before cooking to prevent sticky rice. Check our Owner’s Manual for instructions on making steamed or flavored rice. The RM permits rice to be fried before cooking. The recipe and steps to make Mexican rice in an RM rice cooker are on the following page. Town RiceMasters use the 6 ounce (by volume) Asian standard but also provide capacity by weight on the following page. Six month warranty (warranty starts from Town’s date of invoice).

FAQ Perfect Rice Automatically...Every Time
A bimetallic temperature sensor is recessed into the base of the rice pot where it most accurately senses temperature during the cooking process. It automatically stops the cook cycle after the water has been absorbed by the rice.

FAQ Try Maria’s Mexican Rice in your RiceMaster® Gas Rice Cooker
8 oz. vegetable or peanut oil
3 pounds washed rice
juice of one lemon
two cloves garlic, smashed, finely chopped
1-28 oz. can crushed tomatoes
 
3 1/2 quarts cooled chicken stock
3 boneless chicken breasts, precooked & cubed
2-3 sprigs finely chopped cilantro
3 tablespoons salt
2 finely chopped jalapeños
Thoroughly wash 3 pounds of rice to remove starch. Drain rice in a colander for about ½ hour. Ignite pilot burner by pushing down button labeled “START”. Verify pilot burner is lit by looking through the jacket window. Ignite the main burner by pushing down the button labeled “COOK” and verify the burner has ignited. Add enough oil to cover the bottom of the rice pot. The oil will start heating but the main burner will turn off since the sensor is designed to stop cooking when the rice pot exceeds the temperature of boiling water. Override the sensor to continue cooking by pushing down the button labeled “COOK”. Verify burner ignition. The rice pot will now serve as a brazier and will not shut off automatically until the sensor is reset as described below. Allow oil to heat to frying temperature. Add one or two grains of rice to test. When grains of rice are frying add the balance of the rice. Stir the rice constantly in the oil for 7-10 minutes. Rice will burn if not constantly stirred. When rice starts to turn yellow add garlic. Stir for one minute. Stir in crushed tomatoes and allow to fry for another minute. Add and stir in cooled chicken stock, chicken, cilantro, jalapeños, lemon juice and salt. Stir thoroughly to mix and ensure no food has stuck to the bottom of the pot as that could cause the unit to shut off too soon. Cover the rice pot. You should hear a “click” indicating that the sensor has reset. Rice cooker sensor will automatically turn off the main burner when the rice is cooked.
